Nuts Enough ALMOND Butter Cookies for Hari Raya

Celebrate Hari Raya with a delightful twist on traditional cookies by incorporating the rich and creamy Nuts Enough ALMOND Butter. These cookies are not only easy to make but also offer a healthier alternative to your festive treats.

Ingredients

  • 1 large egg
  • 180g or 1 jar Nuts Enough ALMOND Butter 
  • 80g unsalted butter, softened
  • 90g brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • 80g semi-sweet or dark chocolate chips
  • Optional: Sliced almonds for garnish

 

Instructions

  1. Preheat oven to 180°C and line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk the egg until beaten. Mix in Nuts Enough ALMOND Butter, butter, and brown sugar.
  3. Once combined, add baking soda, salt and vanilla extract.
  4. Fold in the chocolate chips.
  5. Scoop the dough, to about 2.5 cm balls, and place on a parchment-lined baking sheet. Flatten slightly with a spoon.
  6. Bake for 10-12 minutes until golden brown. 
  7. Allow cookies to cool on the baking sheet before transferring to a rack.
  8. Optionally, garnish with sliced almonds.
  9. Cover leftover cookies tightly and store at room temperature for up to 7 days.

 

Notes

Freezing Instructions: Cookies freeze well up to 3 months. Thaw overnight in the refrigerator.

Substitution: An equal amount of Kikiriki PEANUT Butter Creamy may be used instead of Nuts Enough ALMOND Butter.
